How do I charge for web design?

I am doing web design for work and would like to pursue it on my own. I’ve done sites for friends who pay me when it’s done, but how would I arrange payment with a stranger. I don’t see the person giving me half up front and the rest when it’s done. Would I need a contract and how would I go about getting one written up for free or cheap?
